What’s the thing with garlic? Is it okay to use?

Hungarians avoid garlic by minhag. If you strictly follow those minhagim , avoid garlic.
Otherwise go ahead and use. Although the caveat here is that im obviously not a rabbi. I use fresh garlic and fresh ginger.

In Eastern Europe, the garlic grew near the wheat fields and it was a problem of chometz. When my grandparents came to America after WWII, they saw that there was granulated garlic packaged with a pesach hechsher and so with that assurance that there wasn't a chometz problem, they started using it. With time, they transitioned to fresh garlic as well after speaking to the rabbanim in America.
For some people there is a very strong minhag not to use garlic at all because of the above. Many families hold this way.

Garlic is kosher for passover. It's not not chometz and it's not kitniyos.

It’s not an issue of kosher or not kosher.
It’s a minhag, and some people are very serious about minhagim.

Thanks for the source!! Why would it be kitniut if it grew next to wheat?

It was not kitniyot. It was actual chometz because the wheat and garlic would mix and grow together.

And how do we know that it’s okay to use now and not growing near wheat?

From our rabbanim. We follow our rabbis when there are questions. The OU, Star-K and the CRC (Chicago Rabbinic Council) who we follow all say fresh garlic is ok.
If you're not sure if you hold that way, call your rabbi.
