Take rye flour, best is whole grain because the bacteria for the sourdough are in the husk.
Take one spoon of flour, one spoon of water. After 12h, add one spoon of flour, one spoon of water.
From there: double all 12h, or remove half and double the half you have left.
After 3-4 days, you have your sourdough, and you can start baking your first bread, maybe for the first bread you can still add a bit of yeast to your bread dough.
If you buy sourdough, they also tell you it takes 1-2 days to start, so it's not much of a difference.
In general, when I start a new sourdough, I feed it every day for 10 days to 2 weeks, then I keep it in the fridge and feed when I bake, all 1-2 weeks...
