putting in a new kitchen (got advice on here about my cabinets and now have question about backsplash
1- do all new kitchens have a backsplash?
2- do people mostly use the granite/quartz countertop also as their backsplash? or tile?
I know that I should do what I like but honestly I don't know what I like yet and want to know what's current...

I think yes and yes. It's cheaper because you have to buy a whole slab anyway and there's enough width to make the cabinet and backsplash

cheaper to do granite/quartz than tile??

Definitely do a backsplash, it completes the look and is more practical in the kitchen. (Easy clean, no water seeping in, etc.)
Personally, I redid a kitchen on a budget, and tiles costed me about 1/3 that quartz would've, including installation.

Tile is MUCH cheaper then quartz or granite! I just did a stunning backsplash, an expensive tile and still much cheaper than if I did my quartz
