Fish balls - british mums

which fish mince do I ask from the fishmonger?
do I coat with flour eggs and bread crumbs? I like the crust on the fishballs.
I actually want to bake it like patties in the oven - hate frying.
anyone have recipe and instructions?

I used to just ask for minced white fish - you can always check with them what they use 😀

Just roll into balls and fry or bake in oil

The easiest way to do it is to buy a gefilte fish log and let it defrost, roll into balls and fry. Think it works out cheaper too!

how do they get a crust if they are not dipped in flour or/and bread crumbs?

if I want to get a crust on schnitzle or fish I gotta bread them...

falafel balls also get crusty without breading.

anyone care to explain?

Standard way is to defrost, ball and fry. That's what you get in stores. They always use a standard gefilte fish.
My mil slices a piece of slightly defrosted gefilte breads it like a schnitzel and bakes it until golden and crispy.
Both are good I like the plain balls because I'm Brit.

Anything fried/baked in oil gets a crust of some kind... The outer layer in touch with the oil goes crispy. This turns out just like the ones at kiddushim in England.

do you know how she breads it?
cos I also want to bake it.
I guess baking you only get a good crust if its breaded?

so baking wont get the same crust without breading as
its not being fried in hot oil?

It will get a hard crust for sure, but not the same as frying unless you drizzle with oil so it's "fried" in the oven.

yeah, always drizzle with oil.
I actually dont find the british fishballs crisoy.
they have a nice crust but are quite soft. maybe these are breaded, I think it says wheat, bread crumbs on the ing.

They're not crispy once they've cooled..they're soft, but they have a dark thin crust. Definitely not breaded, the outside would not be smooth, it would have texture like shnitzel. Breadcrumbs are probably filler in the mixture.

ye. you are right. just checked.
though my store bought falafel balls arent smooth being fried without coated.

Ya that's because falafel is made from coarsely ground chickpeas not smoothly ground fish, different texture all through.
