Substitute for Silan in water for boiling bagels?

I saw a recipe that has 1/2 cup silan in the boiling water that you put bagels into befoer you bake them. Can I use maple syrup instead? What does the silan do?

It makes the crust slightly sweet.

You can use any liquid sweetener, or sugar dissolved in water, but they'll all have a slightly different flavour.

Generally you add honey and baking soda to the boiling water. This helps give the bagels a nice sheen and golden brown color when out of the oven.

Recipe is:
for dough:
4.5 cups flour or 630 grams (bread or regular white flour)
1 Tbsp dry yeast
1 tsp salt (not coarse)
3 Tbsp honey or silan
1.5 cups warm water (360 ml)

For cooking:
1.5 cups boiling water
1/2 c silan
1 cup white sesame seeds
1 tsp coarse Atlantic salt

Mix all dough ingredients in mixer 10 minutes. Ok if it's a little sticky. Put in oiled pan for 20 minutes.
Preheat oven to 220 Celsius. Divide dough into 8 (can use floured surface).

Heat boiling water with silan. In a plate mix sesame and salt. Roll each piece of dough into a long strip and then attach the strips to form a circle. Dip every bagel into the boiling water for 15-20 seconds on every side (easiest using slotted spoon) and transfer to plate with sesame and salt. Put on parchment paper sesame side up. Bake for 15 minutes until brown.

This recipe was in Hebrew from Mako.co.il I think I translated it correctly.
