Low fat carrot chocolate chip cake

3 cups grated carrots (6-8 carrots)
1 egg plus 2 egg whites
3 T. canola oil
1 3/4 c. sugar (I use a bit less)
2 tsp. vanilla
3/4 c. unsweetened applesauce
2 1/2 c. flour (I use 1/2 whole wheat)
1 1/2 tsp. baking powder
1 1/2 tsp. baking soda
1 T. cinnamon
1/2 tsp. salt
2 T. wheat germ
1/2 c. raisins or mini chocolate chips

Preheat oven to 350 degrees. Spray a 9 x 13 inch pan with non-stick spray. Grate carrots, measure 3 cups and set aside. Beat egg, egg whites, oil, sugar, vanilla, and applesauce. Beat until light, about 2-3 minutes. Add grated carrots, and mix well. Combine flour, baking powder, baking soda, cinnamon, salt, & wheat germ. Add to batter and mix just until flour disappears. Stir in raisins or chocolate chips. Pour batter into prepared pan. Bake at 350 for 45-50 minutes, or until toothpick inserted into the center of the cake comes out with no batter clinging to it.

This can also be baked in 2 round tins, just reduce baking time to about 30-35 minutes.

thanks for posting all the recipes...I love that cookbook btw. do u think it would work w some apple juice instead of all the sugar ( I like to give some to my toddler)
