I thought that it would be a good idea to defrost the brisket and marinate it overnight in coke and ketchup etc... but now I do not see a single recipe that says to marinate it overnight! Will I ruin it if I have it in marinade overnight?

I don't think you'll ruin it, but I think it will be intense flavor. Of course it depends how you're going to cook it, will you just cook in a dry pan, or are you going to continue to cook it in liquid?

The caffeine and acid tenderizes the meat, it will be yummy.
