Could someone please post the Classic Apple Cake recipe from the Spice and Spirit cookbook? I don't have my copy of that cookbook and want to make that cake for shabbos tonight.

I know it's too late, I'm sorry, but if you need it for another time:
Classic Apple Cake
1 c oil
2 c sugar
3 eggs
3 c flour
1 t salt
1 t baking soda
1 t vanilla extract
3 c peeled, cored, and cubed apples
1 c raisins
1 t cinnamon
Preheat oven to 350. Grease and flour 9" tube or bundt pan. In a large mixer bowl, beat oil and sugar. Add eggs, then flour, salt, baking soda, and vanilla. Set aside. In a separate bowl, toss cubed apples, raisins, and cinnamon until apples are coated. Stir apple mixture into batter. Batter will be very stiff. Spoon into the greased tube or bundt pan and bake for 1 hour. Cool completely before cutting.
