Servings: 4
Ingredients:
2/3 cup rice
2 tbsp oil
2 garlic cloves, crushed
1 tsp grated fresh ginger
1 carrot, cut into very thin sticks
1 zucchini, diced
8 oz baby spinach
2 tsp light soy sauce
2 tsp light brown sugar
Directions:
1. Cook rice, rinse under cold water.
2. Heat oil in a skillet and add the crushed garlic and grated ginger. Cook for 30 seconds.
3. Add the carrot sticks and diced zucchini to the mixture and cook
for about 4 minutes, so the vegetables still retain their crunch.
4. Add the baby spinach and cook until it starts to wilt, about 1 minute.
5. Add the rice, soy sauce, and sugar to the veg. and mix together well.
