Shakleemom, I have something similar. It's a chocolate fudge cookie with a peanut butter center, but no glaze/cream on top. Would you like the recipe?

Actually, here it is, no need to ask.
If you would like, I imagine you can make a simple frosting for the top. I get rave reviews on this cookie, and send it to Simchahs often
Peanut Butter Filled Cookies
1 stick margarine
½ cup sugar
½ cup packed brown sugar
¾ cup peanut butter (1/4 in cookies)
1 egg
1 tbsp soy milk
1 tsp vanilla
1 ½ cup flour
½ cup cocoa
½ tsp baking soda
¾ cup confectioner sugar
Mix all ingredients for dough (leave ½ cup p.b. and all the confectioner sugar for filling) Form balls, flatten. Mix ingredients for filling and put pea sized amount on each flattened cookie. Fold cookie dough over filling, form ball again and flatten with glass dipped in sugar. Bake at 350 for 8-10 minutes.
Any questions? Ask away!

I never tried, but the idea is that there is a contrast between the cookie and the filling. When you bite into these seemingly plain chocolate fudge cookies, you are in for a creamy surprise... YUM!

Yum! This will be my first project iy”h when I can think straight (just preparing). So sunshine, dahlin’, you do two circles, one under and one on top of the filling? So I can do like a crème cheese + confectioners sugar filling perhaps?
Gotta fish out a frosting that smears on thick and dries hard so it won’t mess up when stored in a jar.

Shakleemom, you don't do two circles. You form the chocolate dough into balls and flatten them out, then put some filling on top and wrap the chocolate dough around it, forming a ball. It's one piece of chocolate dough and one pea sized (or more) of filling. The idea is to totally hide the filling with the chocolate dough so when you bite in, you get that creamy center.
Let me know if you need help, whilst attempting this complicated feat.
