For some reason all my cookbooks and recipes use margarine.
Im looking for a delicious white cake that uses oil and can be adapted to a CC cake, or marble or wtvr.
TIA

Chocolate Chip Cookie Cake

2 1/2 cups flour
1 1/2 cups sugar
1 Tablespoon baking powder
1/2 teaspoon salt
3/4 cup milk
3/4 cup butter, melted or vegetable oil
4 teaspoons vanilla extract
4 eggs
3/4 cup mini chocolate chips

Glaze:
1/3 cup confectioner's sugar
1/3 cup water
1 Tablespoon butter
2 teaspoons vanilla extract

1. Heat oven to 325 F. Generously grease and flour 12-cup bundt or fluted tube pan.
2. Combine cake ingredients, except chocolate chips, in a large bowl. Beat on low speed 30 seconds; scrape sides of bowl. Continue to beat 3 minutes at medium speed. Fold in chocolate chips. Pour into prepared pan. Bake 40-50 minutes or until toothpick inserted in center comes out clean. Remove cake from oven; pierce cake surface deeply with a fork, about every inch.
3. Blend glaze ingredients in a small saucepan. Bring to a boil; reduce heat and simer 1 minutes. Spon half of glaze over hot cake in pan. Allow cake to stand 10 minutes; invert onto serving plate. Spoon remaining glaze over cake. Allow cake to cool before serving.

The Drizzled Marble Cake from the Spice & Spirit works great with oil instead of marg.

I've never tried adding things to it, but I make it often as a plain white cake. I don't see why it wouldn't work with additions. It's a delicious, moist white cake.

I would love for someone to just post the spice and spirit marble cake. I think my sister stole my copy of the cookbook years ago!

(Not SNS)
This is my MIL's recipe:

4 eggs
3c flour
2c sugar
1c oil
1c water
1 tsp vanilla

(If you're not using self rising flour, you need to add 3 tsp baking powder & 3 tsp salt too.)

For chocolate you can replace 1/2c flour with 1/2c cocoa. For marble you can save 1/2c batter, add 2 tbsp cocoa, then marbelize. You can also replace the oil with applesauce for a fruitier cake.
