I've finally found an easy and reliable recipe. No margarine, no need for a mixer.
For OJ, I usually squash the orange after I peeled off the rind and put in pulp as well.
Orange semolina cake
2 1/2 cups self-raising flour
1/2 cup combination of semolina flour and ground almond
1tsp baking powder
1/2 teasp salt
1 1/2 cup sugar
zest of 1 orange, finely shredded
1 cup oil
3 eggs, lightly beaten
1/3 cup orange juice (preferably with pulp or freshly squeezed)
For drizzling on the top
1/2 cup orange juice (same as above)
3tbsp icing sugar
1/2 teasp orange blossom flour (optional)
1. Mix flour, semolina, ground almond, baking powder, salt and sugar in a large bowl
2. Add liquid (oil, eggs, OJ) and mix till there are no lumps
3. Oil a standard size rectangular cake tin. Pour the batter and bake in a pre-heated
350F oven for 25-30min, till a toothpick inserted in the middle comes out clean.
4. Mix the ingredients for drizzling. It should have a syrupy consistency.
Poke lots of holes in the cake with a toothpick, drizzle syrup while the cake is still warm.
(I like mine sticky. If you like yours more cakey, reduce the amount of syrup.)
Variation: you can use 1/2 cup of semolina and omit ground almond for a nut-free version.
You can pour half the batter in the baking tin, sprinkle chocolate chips and pour the remaining
batter on the top.

I forgot to mention that I use the cake tin that is about 11" x 7".
It should measure about 6cups, so you should be able to use 8" round tin.
