Kashering granite countertops for pesach

Well, after 18 years of marriage (BH) and 16 years of making Pesach on our won DH has finally agreed to redo some of the kitchen. So... we now have granite countertops and stainless steel sinks.
QUESTION:
HOW does one kasher this stuff for Pesach?
I also have an "InstantHot" in my sink, can I use that for kashering?

We poured scalding hot water over a stone being held in mid air, followed by cold water. That's what our rov told us to do.
