I have too many packages of ground filberts from last yr. that will expire this yr. In August
If I use those and cocoa powder will it taste like Nutella

you dont have to refrigerate them before you bake either.
20 to 30 minutes baked should be fine.

Use less ground nuts if you're adding cocoa or it will dry out the cookies
