In Israel since there is so much kosher l'pesach kitniyos products, many people buy them for their kids as soon as they hit the shelves a bit after Purim.
DH learned the chometz dance as a bochur. After you eat you shimmy while hitting your clothes and stamping your feet. It’s fun and creates a positive feeling. ("Leah, did you finish? Do the chometz dance!")
