ISO cold pasta salad

I was once at a simcha and they served a cold pasta salad with sundried tomatoes. Does anyone have a recipe for this?

1 packet of pasta
1 mango in cubes
4 salad onions (spring onions/green onions)
dates, cut up
dressing:
mayonaise
chicken seasoning

mix all and adjust until it tastes right.

its really good even the men like it!

That sounds so easy and yummy. But what is spinach dip? Do you find that in a container by the Sabra spreads?
Also, what kind of pasta do you use?

You can just lightly fry a couple of cloves of garlic (for under a minute - till they are fragrant but not changing colour) and then add it to the pasta with chopped sundried tomatoes, some salt and pepper, maybe some spinach leaves chopped or basil (but not necessary)

I use almost any kind of small piece pasta- macaroni, or those twirly macaroni, or anything else will do - pinwheels, spirals, etc.

I just made the pasta with sundried tomatoes and spinach dip - it was sooooo easy and I tasted a little and it was sooooo yummy!!
One more question - do you serve this cold or warm?

I usually serve it cold/room temp. I'm so glad it worked out for you. It's also great bec it looks kind of fancy, what with the spinach and all- little does everyone know that it took roughly 12 min to make!

Flaum's makes a delicious spinach dip.
If you can't find that in your area, I can post a really easy and delicious spinach dip recipe for you.

Spinach Dip
• 1 lb. frozen spinach, partially defrosted
• 1/2 cup mayo
• 3 cloves garlic
• salt to taste

Process spinach, mayo and garlic in blender. Season with salt to tastes. (Spinach needs a lot of salt.) Process again for a second to mix salt.

If you like the dip more mayonnaise-y, you can add more.

Nicole-
The pasta salad was delicious, however, I think for the next time I will mix in the spinach dip right before serving. I would cook the pasta and slice the sundried tomatoes before shabbos and then right before I serve it, I will mix everything together. But otherwise I will make it again.
