How about a Chicken-Salad?
or - here's another idea:
My Mom always used to make Cornflake Chicken for Shabbos, and she would serve it the next day (Shabbos Lunch) Cold.
It was REALLY good!!!
Basically, put a couple of handfuls of cornflakes in the food-processor together with lots of spices and salt, and then coat the chicken pieces in the mixture and bake!
Enjoy!

Shnitzel
Broil or grill chicken and make chicken wraps
or put the broiled chicken in a salad

OK, here's a good one:
Dip the Chicken Breasts into a mixture of Egg with Apricot Jam and Mustard, Then into bread crumbs with salt, pepper, garlic powder, onion powder etc...
And Fry on both sides.
I also likes Deffy's idea with the chicken in a salad.
You can grill some Chicken breasts (if you marinate them first, they'll come out really tasty), and then cut them into cubes and sprinkle over a large lettuce and cherry-tomato salad. YUM!!
