Looking for a foolproof, delicious, pesach cookie recipe that I can make with group of girls. I have lots of experience baking, but not much experience making pesach stuff, so I really need your help!

Chocolate chip cookies
1 3/4 cup cake meal
1/2 cup potato starch
1 t baking soda
1t salt
1 cup butter or margarine
3/4 cup white sugar
3/4 cup brown sugar
1 t vanilla
2 eggs
2 cups chocolate chips
1 cup walnuts ( optional)

Cream butter and sugar until light and fluffy (abaut 5 minutes)
Add eggs one at a time beating 2 minutes after each addition
Add vanilla beat well
Add dry ingredients beat well
Stir in chocolate chips and chopped nuts

scoop onto parchment paper lined baking pan and cook at 375 for 20 minutes or until golden brown

For those not eating gebrokts, or using cake meal, these cookies are melt in your mouth with nothing left after they are done....

4 egg whites, whipped with a pinch of salt until stiff, add 1 cup of sugar, and then by hand add 2 cups finely ground walnuts. Drop onto parchment paper on a cookie sheet by the spoonful, and bake on 350 for 8-11 minutes .....they can be a bit sticky and chewy but they are yummy. of course, if you like chocolate chips, I am sure you can add that, or you can place some chopped walnuts on top of the cookie batter.

These are easy and awesome. I don't like raisins so I substitute chocolate chips, and I leave out the nuts. They come out amazing even with the changes, so have fun with the recipe.

1 C matzah farfel
1C matzah meal
3/4 C sugar
1/2 tsp. cinnamon
3 eggs
1/3 C oil
1/2 C chopped walnuts
1/2 C raisins

Combine matzah meal, farfel, sugar and cinnamon in med. sized bowl. Beat eggs and oil until frothy in a separate bowl. Pour mixture over dry ingredients. Mix well. Fold in nuts and raisins. Grease a cookie sheet. Drop by teaspoonfuls onto cookie sheet 2" apart. Bake at 350 for 20 minutes. Makes about 2 dozen cookies.
