Please post any one of your great non-Gebrokts Pesach cake recipes that do not require the eggs to be beaten, whipped, etc.

my mother makes a coco fudge cake that doesn't need beaten eggs. I can get you the recipe tomorrow or the next day....
it might be worth it for you to invest in a hand mixer just for pesach

Thanks! I forgot to mention that I have a great brownie cake recipe already.
A hand blender costs just $15. I just don't have time to patchke with snows, and would like to make whatever one bowl cakes I can. Any other baked goods I need, will have to be bought.

Here are two recipes - both gebrokts
PESACH FAIRY CAKES
5 oz / 150g soft margarine
6 oz / 175gcaster sugar
3 eggs
4.1/2 oz /140g potato flour
1.1/2 oz / 40g cake matzah meal
1.1/2 teaspoons baking powder
1 teaspoon vanilla extract (I never use)
1. Preheat oven to 200 degreeC, 400 degree F. Arrange 20 paper cases in bun tins or on flat baking trays.
2. Put all the ingredients in a bowl and beat by hand or machine until a smooth batter is formed.
3. Half-fill the paper cases with the mixture
4. Bake for 15-20 minutes or until golden brown. Cool on a wire tray
You can omit vanilla and instead stir in the grated rind of 1 lemon.
You can also add chocolate chips or some cocoa into if you like.
BROWNIES
8 fluid oz oil (227ml)
12 oz caster sugar (360g)
6 large eggs
4oz fine matzah meal (120g)
2 oz cocoa (60g)
4 oz ground hazelnuts (120g)
juice of 1 lemon
1. Beat eggs and oil
2. Add sugar beat until thick
3. Add other ingredients
4. Bake 180c 35 minutes
5. Makes two trays

out here in Israel a hand mixer is actually closer to $50 so I still dont have one
