Do you need to put in meat? I make a great cholent without meat sometimes.
Chuck is less fatty than flanken and tastes great in the cholent btw. Make sure to use fresh onion and garlic for great flavor.

If you leave out the meat, will you serve someting else fattening instead? I say use the meat - just maybe put in less.

I use a small amount of meat - just enough to make the flavor happen.
