A recipe I have for sesame chicken suggests to make a lot and freeze the fried nuggets for the future.
Any suggestions as to the best way to do this to keep the nuggets the most intact and crunchy? Thanks.

I would lay them out on a cookie sheet, then transfer to zip-lock bag when frozen.
Or just divide them into batches of as many as you'd use at a time, so you can just defrost as much as you need at once without defrosting more than you need.

Anyone ever done this? Freeze them on a cookie sheet- bare? That doesn't seem right.

And then my question is about defrosting them- how to get them to stay crisp?

I freeze them on a cookie sheet just long enough so they stay separate when I transfer them. That way, if I only need a few, I can take out as much as I need, and stick the rest back into the freezer without unnecessarily defrosting extra.
To make removal easier once they are frozen, I usually line the cookie sheet with plastic wrap or parchment paper. That way, you can lift the plastic/paper, and just peel off the frozen nuggets and drop them into a zip-lock bag.
