Marinated Veggie Salad
6 carrots, cut up
1 zucchini, chunked
1 red onion, sliced
cut up pepper, any color
parsley to taste
dressing as follows
Cook your carrots & zucchini in water for about 5 minutes, or until tender. Add your onion, pepper, and herb. Add dressing & serve cold,
Herby Salad Dressing
oil to taste
1/4 cup vinegar (for Pesach use lemon)
sprinkle each of oregano, basil and salt
Combine.
