YUMMY AVACADO VG WRAP

Sliced avacado
roasted vgs-red and green peppers, eggplant, onion (either in the broiler, oven or my fave bbq!)
fresh sliced tomatos
mayo
Kens honey-mustard dressing
Soft tortilla (Ortega now makes kosher soft tacos!!!)

spread torilla with mayo and top with vgs and avacado(generous amount!) add tomatoes and sprinkle with dressing. Roll up and ENJOY!

Other days I add grilled chicken!

Nothing special. The 9 days is the time when I don't patchke with fancy meals. If I run out of ideas we can always eat sandwiches.

Can also do "breakfast" foods like eggs, french toast, etc.
I get kind of sick of tomato sauce and cheese in baked ziti, lasagna, pizza, and like some variety Smile

I try to steer clear of all the pasta cheese after a couple of dinners and lunches its all too much.
eggplant is great, I slice it legnthwise and bread it. some days I will fill it with spinach and garlic stuffing and pour a sweet sauce on top. I serve this with garlic bread, cream of mushroom and fresh salad.
other meals I will do eggplant parm. or slice the eggplant legnthwise smear with olive oil and spices and grill I fill each roll up with fresh veggies and feta cheese. this is a great side for grilled salmon.

hoagies made with sauteed portobella mushrooms, onion and bellpepper, covered with mozzarella, toasted and then spread with a little garlic mayo.

Non-Dairy, Non-Fish meals:

-Soup, Bread and Dips (and/or Cheeses), Salad
-Veggie and Tofu Stri Fry over Rice, Salad
-Pasta with Sauce, Veggie on Side, Salad
-Sandwhich/Wrap/Burritto/Veggie Burger, Veggie or Rice/Couscous on Side, Salad
-"Breakfast:" Pancakes/French Toast, Omelette, Fruit Cups
-Any Stuffed Veggie (over Rice), Salad

Eggs can be made pareve. IMO, not as good, but doable...put in a lot of veggies to add more to it.

My menue is ready; we only need 6 nights as per my calculations:

Mond - Wed
Boxed mac and cheese, salad
fresh fish, rice, steamed vegs
pareve tacos with varied toppings

Thurs
leftovers

Sunday
baked manicotti, fresh salad

Monday, Erev TB
leftovers/spinach carrot quiche

I have much more menue ideas; I could hold out for another week at least!
