the lacy potato kugel recipe from the kosher pallette is excellent and very similar to caterers kugel that I have tasted. It uses the heating oil method and also you add boiling water and pot starch to batter before baking. But no baking powder.

how do u heat the oil so that it sizzles? in a frying pan or in the oven?

Heat the oil in the oven>A caterer once told me they use diff ppotatoes for diff things,baking potatoes potatoes for mashing for kugel,cholent etc.

thank you.
and I make potato kugel every week and I can attest to the fact that different potatoes will absolutely yield different results. I use the starchy idaho potatoes for the best resulting potato kugel, I once tried using a different brand/type and it was a disaster...

I had a friend that would use that heat the oil trick and the kugel was amazing!!!
Best potato kugel I ever had was in Budapest made by a 90 year old Aushwitz suvivor. Amazing stuff.

Yes! I saw something similar in one of the kosher by design cookbooks (Passover by Design maybe?) and it mentioned this trick on the sidebar.

just took my kugel out fluffy on the inside crispy on the outside mmmm!!!!!!!!! GS all!hope u have a good one

msym gave a great recipe. If you are lazy when it comes to onions (like I am), you can easily leave it out and it'll still taste great.
