Looking for a quinoa salad/side dish with black beans, cumin, other beans, maybe tomatoes, avocado- Anyone have a good recipe?

I know I'm a little late responding, but I just saw this post now.
This quinoa salad is really delicious. I've made it many times.
Quinoa, Black Bean, & Corn Salad
2 cups vegetable or chicken broth (I use water with MSG free soup mix)
1 cup quinoa
1 can black beans, drained & rinsed
1 cup corn kernels
1 red pepper, chopped
4 scallions, chopped
1/4 cup chopped fresh cilantro or parsley
2 cloves garlic, minced
1/2 tsp. cumin
1/4 tsp. cayenne pepper (or to taste)
3 - 4 T. lemon or lime juice (preferably fresh squeezed)
3 to 4 T. extra virgin olive oil
salt & freshly ground black pepper
Cook quinoa according to package directions in broth. Once quinoa is cool add remaining ingredients. Yum! Keeps 3-4 days in the fridge.

Just wanted to add another really simple way to prepare quinoa:
Cook quinoa according to package directions.
Mix with mashed avocado & salt.
(This sounded strange to me before I tried it but it is delicious, easy, & very filling and nourishing.)

Cook quinoa as directed on package. Mix on black beans (canned and rinsed), can of corn, and an avacado. Dressing is salt and pepper to tast and equal parts lemon juice and olive oil to taste (I start with tsp of each and continue adding until it tastes good).
Great salad for Shabbos lunch. It's not that good cold, but fine room temp. SO easy and yummy.
