Can I make chicken soup with chicken that's already been baked? It's a small shabbos, and I don't want to use a new chicken, because it won't get eaten. I have leftover chicken, and I'm trying to think creatively...lol!

sure! it will turn out fine. If you really want you can biol the veggies first and add the chicken when they are somewhat cooked. But it will work either way.

I think it might be somewhat bland. But the chefs swear by broth made from roasted chicken bones so it might have some nice flavor from that.

Here's what I do: pick all the cooked chicken meat off the bones. Make a nice stock with the bones and veggies (onion, carrot, celery) and herbs spices (e.g. fenugreek, celery seed, thyme, oregano, etc.). It's also a good idea to add some apple cider vinegar or other vinegar to the stock cooking b/c it helps draw out calcium and other minerals from the bones, making the soup more nutritious. Plus it tastes good. Then strain the stock, put it back in the pot, and add fresh veggies (celery, carrots, onion, parsnip, turnip whatever you like in your chicken soup). Add more seasoning as needed. Add the cooked chicken meat you picked off the bones late in the cooking, basically just to heat it up.
