This is very yummy and it's more of a desert, but at least you get your veggies.
For one small to medium sized butternut squash use a smaller whip for larger use a larger one.
Parev Whip
1 egg (extra large american size, large UK)
3 tablespoons sugar
3 tablespoons flour
1 teaspoon vanilla essence
cinnamon
Peel butternut squash, scoop out all the pips and stringy bits.
Cut squash into cubes (not too large and not too small) and boil with a little water until tender.
Take off the gas and leave to cool. Once cooled, drain water.
Blend squash and add the whip, egg, sugar, flour and vanilla essence.
Put into baking tray or if you want you can put it in a pie base. Sprinkle with cinnamon and bake until mixture isn't runny.
You can also add almond slices on top with the cinnamon if you like.
Best served hot/warm.

I make a butternut squash kugul like this:
1 cooked and mashed butternut squash
3/4 cup sugar
3/4 cup flour
2 eggs
mix and place in round glass pyrex. sprinkle cinnamon on top. bake at 350 for about 1 hour.
Yummy!
