SPAGHETTI SQUASH WITH GREENS
a la From Clean Eating magazine
spaghetti squash, about 3 lbs.
2 small heads radicchio or other greens, about 4 cups
salt and pepper to taste
1/2 cup chopped fresh parsley
juice of a lemon
2 oz Parmesan cheese, optional
Half your squash and bake or nuke it. When slightly cooled, fork out the strings. Add to rest of ingredients and serve warm or at room temp.

Um ... this is a starchy squash. It just looks like spaghetti. If it's maris ayin for you, then just SOB.
