(I think we should have a subforum dieting recipes!)

I want to make cookies to have on my way to work or at work as a snack...but I don't want to gain weight!
I'd substitute splenda for sugar, but what about that terrible margarine???

Anyone have a recipe for oatmeal cookies or chocolate chip or ANYTHING that doesn't have margarine?? (oil isn't as bad....)

Here is my recipe for oatmeal cookies without margarine:
1 c. flour
3/4 tsp. baking powder
a dash of salt
1 tsp. cinnamon
3/4 c. oil
1 1/3 c. sugar (I put in only 1/3-1/2 c. sugar, I don't like it too sweet)
2 eggs
1 tsp. vanilla sugar
2 c. oatmeal
1 c. raisins

Mix everything together. Form 1" balls. Place on cookie sheet.
Bake at 350 for 12 -15 minutes.

I also have a good recipe of no margarine rugelach

3 c. whole wheat pastry flour
3 c. unbleached white flour
3 tsp. baking powder
1/2 tsp. salt
2 tbsps. tahini (I subsitute it with 1 whole egg)
1 c, oil ( use canola oil, it's healthier than vegetable oil)
1 1/2 c. cold apple cider (approximately)

Combine dry ingredients, add liquids, mixing till a dough is formed.
Roll dough. Smear oil, add your favorite topping. ( I use cinnamon& sugar) Roll it up, and slice it. Place on cookie sheet. Or you can cut the dough pizza slice style and roll up each slice individualy
bake at 350 for 30-40 minutes.

A few months ago the Mishpacha magazine published 2 recipes for No-Margarine Chocolate Chip cookies. I'll go dig them up and type them for you! They are YUM!

No-Margarine Chocolate Chip Cookies

4 eggs
2 C. canola oil
1.5 cups white sugar
1.5 cups dark brown sugar
4 tsp vanilla extract
Beat eggs with oil for 5 mins on medium-high speed. Add sugars and banilla, and beat until well blended and light and fluffy.
ADD:
2 C. finely ground whole wheat or white flour.
3.5 Cups white flour
2 teaspoon baking soda
1.5 C. mini or regular chocolate chips.

Using 'K' hook - add flours and baking soda and blend until cookie dough forms. Add in chips. PUt the sticky dough in fridge for 1/2 hour covered, before rolling into balls.
Flatten slightly.
Bake at 350 or 180 for 8-10 mins.

Sorry - I just realized that it's quite a fattening recipe with all the flour and sugar.
Here's another one from the magazine:

No-Margarine double choc. chip cookies

1 C. canola oil
1.5 C. sugar
2 eggs
2 tsp vanilla
Beat 5 mins until somewhat thicker.
Change to 'k'hook. Add:
2 C. white flour
2/3 C. cocoa
3/4 tsp baking soda
Mix until dough forms.
Add 1 cups choc chips.

Roll into balls. Don't flatten. Bake 350 for 8-10 mins.
They are done the first minute that you see wrinkles and lines on the top of them.
ENJOY!

By the way, my MIL recently told me that when she substitutes splenda for sugar in chocolate chip cookies, it doesnt work well and they end up crumbling (sill tastes good tho!).

Margarine is full of saturated fat, which is very unhealthy, it clogs the arteries that can lead to heart attack, high cholestrol C'v. Oils like canola and olive, contain unsaturated, poly unsaturated, which has many health benefits. I personally try to avoid saturated fats like margarine as much as possible.

I add applesauce instead of oil.I also have a dietetic oatmeal cookie recipe that calls for pureed prunes. Its sweet and chewy.

yeah, but can you put applesauce in cookies?? I've done it for cakes, but I'm not sure it'll work in cookies. ahve you tried it?

Note: margarine unless hydrogenized, butter and shortening for that matter is terrible on ones cholestrol it forms a plaque around the arteries. Oil is a much better (though not always a nicer consistency or taste )choice Exclamation

I use an organic margarine that has no hydrogenated oils, no saturated fats and trans fats. smart balance makes it.
I would say it's as healthy as using canola or safflower oils, and tastes great in baking.
