I would mix a lot of grated zuccini into the ground meant. Would chop and sautee a lot of veggies to add.

can someone post a full recipe for Stuffed Cabbage please? I like the idea of using mashed potato as filler (instead of rice) but I never made SC before and not sure the process.... cooking the leaves ? adding sauce? how long to bake?

I don't have access to my recipe over Pesach, but this is basically it. Just freeze the cabbage leaves, stuff, roll, and bake.

Mine are ready for YT!
Freeze cabbage overnight. Defrost. Separate leaves. Soak in soapy water for 3 minutes. Rinse each leaf under strong water stream.
Stuff with ground beef mixed with one egg per pound, a little salt, paprika, black pepper, garlic and a little sugar.
Pour sauce onto bottom of pan. Sauce is: tomato paste, equal amount of water, sugar, garlic, salt, paprika and a little oil. Lay cabbage rolls in pan. Cover with remaining sauce. Cover pan with aluminum foil. Cook two hours in medium oven.
