I got several bags of carrots that we didn't use and I also have some zucchinis. And plenty of potatoes !

Anyone ?

potatoes, sweet potatoes, cortland apples
matza meal, tapioca starch (no big deal, can keep in the cabinet until I need it during the year)

Potatoes and sweet potatoes. I think they'll probably go bad before they're used up. :-(

carrots. lots 'n lots.
I decided to go with the big 10 lb bag, thinking we could probably manage to use it up.
but.
I forgot to cross it off the "already bought" list and so when I did my just-before-yontif shopping trip, I bought ANOTHER 10-lb bag.....

bake some carrot muffins or carrot cake..delicious and freezes well.

sweet potatoes can last a long time in the fridge.

Carrots keep a long time in the fridge. Even if there is black mould on the outside, peel and they are usually perfect inside.

not realy, they don't taste the same, lose their taste and sweetness and get bendy

if you have room in the freezer, you can shred them and freeze them for later use in cooking or baking.

I make soup with carrots, sweet potatoes, potatoes, and whatever else. puree it and freeze. my son loves it so this is how I get vegetables in him!

We had 22lbs of carrots and used them all up, but I bought more as well as some more onions, to use up the celery and made it into kishka after Pesach.

Matzah, matzah, eggs, matzah, potatoes, matzah, matzah meal, and did I mention matzah? Cake meal burns me up--it comes in 1-lb. boxes and I use maximum 1/2 cup a year, sometimes only 1/4 cup. I put it away for next year because I know from experience that a. I will never use it during the year and b. it'll still be ok after one year. two years I'm not sure about, it won't spoil but it will taste stale eventually, as if it tastes so fresh to begin with! Potato starch went back into storage, as did an unopened box of matzah meal.

I am pleasd that we finished 5 kg. each of sweet potatoes and beets and 9 avocadoes that we ordered in bulk. Glad we got 3kg of carrots instead of five. (Okay, a few beets did spoil).
BUT we have two unopened packages of matzah--2.5 kg each. (10 lbs. total) I can't look at the stuff.

Nobody wants to hear this, but a friend of mine put last years' matzot away--she got shmurah on a major sale during or right after Pesach so it was worth it. Reheated briefly in the oven they tasted fine, according to her report.

We used to save matzah, until we had mice invade our Pesach cabinet, eat all of our matzah and leave droppings all over all of our dishes... we don't do that any more. Smile

I have a ton of beets still. That and a pretty much full canister of potato starch that will probably never be used. (Does anyone actually use potato starch during the rest of the year?)

ooh, that's a good idea. I don't know if I can haul my big pregnant tush into the kitchen to do that, though.... Smile

we don't use packaged matzah meal, but make our own. we had a lot of extra this year (thank you, my abba, for insisting we buy SO much matzah.... about 7 lbs extra.....) so we double wrap it and put it in the freezer til next year! takes up less space than matzah boxes.
