Does anyone have a recipe for potato leek soup that I can use instant mashed potatoes in place of regular potatoes? Milchigs is ok.

clean the leeks well and a couple of stalks of celery.
In your soup pot saute the leeks & celery until very soft but not brown.
Add boiling water, salt, peper, onion & garlic powder.
Cook this for about 1 hour (I use my pressure cooker so I don't know how long conventionally.)
If you want it blended, use the stick blender t this point.
Add the mashed potatoes at the end just before serving so the mashed potatoes don't scorch on the bottom of the pot.
You can add milk, cream or unsweetened soy milk at the end if you want, but its not necessary.

Ok, sounds good.
Do you know much soup I can make (approx) with one really big thick leek?
Does anyone else have any reciipes?
