Homemade no-fry, toddler-friendly chicken nuggets

1 lb ground chicken or dark meat turkey (the white meat turkey is too dry)
Flour
2 eggs, beaten
Plain bread crumbs
Spices (I use Mrs. Dash, paprika, garlic powder, a little salt and pepper)

Preheat oven to 350. Add some spices and salt and pepper to the ground chicken/turkey and mix lightly. Add spices to the flour as well. Spray two baking sheets with cooking spray. Roll some ground chicken/turkey into a ball about the size of a walnut. Roll the ball first in the flour, then the egg, then the bread crumbs. Place onto the baking sheet and press down to form a nugget. Once the baking sheets are full, spray the nuggets with a little cooking spray.

Bake at 350 20 minutes and then flip over. Spray again with cooking spray. Bake another 10-15 minutes until done. Serve with the dipping sauce of your choice. It makes about 24 per lb of ground chicken. I freeze and defrost as needed. Enjoy!

thanks so much!
I made this for supper tonight and my toddler actually ate it. problem is that when dh and I were ready for supper a few hrs later it was dry/hard? is there anything to do for that? was I supposed to add eggs to the ground chicken mix? (no cooking skills at all here).

Hmm, I didn't have that experience. I didn't put any egg in with the meat. Usually I serve immediately and freeze the rest so they are not sitting out for any length of time, know what I mean? I'm sorry they didn't come out so well for you Sad

I would be hesitant to mix any oil in with the chicken, but another baby chicken nugget recipe I used once had some grated (peeled) apple in it. Maybe that would help if you plan to serve some time after making them...

Yes, that is definitely possible! Now I feel a little better about my recipe Smile most things that aren't saucy or fried will dry out like that. For the record, all the recipes I adapted to make this one called for frying the nuggets in oil. I didn't want to do that. My DS doesn't need to get hooked on fatty, fried foods (like his poor mama is).
