Does anyone have a recipe for orzo that has simple ingredients (you know, like stuff I'd have around in the house) that doesn't call for mushrooms? TIA
1) Put 225g/ 8oz/ 1cup of barley in a measuring container and agg water to reach the 600ml/ 1pint/ 2.5 cup mark. Leave to soak for at least 4 hours.
2) Heat some oil in a large pot and fry an onion for 5 mins then add 2 carrots (sliced) and 2 sticks of celery (sliced.) Cook for 3-4 mins.
3) Add the barley and its soaking liquid to the pan. Add 225g of cubed swede or turnip and 225g of cubed potatoes plus 475ml/ 2 cups of vegetable stock. Add salt and pepper, bring to the boil then reduce the heat and cover the pan.
4)Simmer for 40 mins or until most of the stock has been absorbed and the barley is tender. Stir occasional towards the end of the cooking to prevent the barley from sticking to the base of the pan.
**If you don't have or don't like all the vegetables in the recipe, either just leave them out, leave them out and use more of the ones you do like/ have or substitute with other slow cooking vegetables**
