I use ground turkey alot, and have some good recipes for it, but this time we accidentally bought 99% lean. Total cardboard. Yuck. Nothing I have tried so far with it has been edible (and we are not picky eaters). I was thinking about browning it with onions and pouring tomato sauce on it, hoping to disguise the taste and texture (which is so dry it almost cuts your throat!) Oh yeah, since we live out of town, we have 5\6 packages of it left. Anyone have any better ideas?

vaguely, w/o the recipe it goes s/t like this -

saute onion & pepper, add turkey, brown it, either add taco seasoning and water or tomato sauce and spices, serve in tortillas or pitas.

sweet and sour meatballs

meat
1 medium grated onion
1 egg
pepper
paprika
bread crumbs

Sauce
1 46 oz can of tomato juice
1 can jellied cranberry sauce
1 1/2 cups water

make like meatballs!

Meatpuffs

1 pkg puff pastry squares

1 medium onion sauted
1 lb ground turkey browned with the onion
paprika and pepper to taste

fill puff patry
brush top with an egg
bake at 350 till nicely browned on top

I serve this with a mushroom sauce its delicious!

I've used ground chicken - don't know how it compares but I would make anything that you ususally would make with ground beef. (Meatballs, burgers, meat loaf)

try mixing the ground turkey with full-fat ground beef, if you have some, and use it as you would beef.
the extra fat in the beef should balance out the dryness...

or just add lots of olive oil to your recipe Wink

I would make meatballs with it, I usually use turkey for my meatballs. Or buy a package of ground chicken or meat and mix it in with that.

mix half-and-half with ground beef or veal if it's too dry for you.

I make meatballs and meatloaf with lean ground turkey. I just use a ground beef meatball recipe and add extra ketchup and/or water to compensate for the dryness of the lean turkey.

Just fyi, I ended up sauteeing it with a lot of onion, (and olive oil, Mommyluv), and then adding tomato sauce to it....it still looked kind of dry, so I had a brain storm, I had leftover meatballs in the fridge, from Y"T when I actually use full fat ground beef (they were from the freezer!). It was mostly sauce and some broken apart meat, so I threw that in with the turkey. Kind of weird, since they had different sauces, but I put it all in a pan with mashed potatos and top, and voila, delicious shepherds pie. Next week I will try a different one of these ideas.
