Need a cake recipe with oil

ISO a simple pareve vanilla cake for a child's birthday with oil instead of margarine. I can use soy milk if needed, but please no other specialty ingredients (no pudding mix, coconut, etc)

I already have a decent recipe for a no-egg cake with vinegar, but I would rather do one with eggs in it.

Recipes with self-rising flour a plus!

KBD #1has a great lemon bundt cake with oil. It also calls for lemon extract but you can leave it out if you dont have. I think it's called Lemon Delight Bundt Cake, easy as anything!

the first Kosher Palette has an awesome Yellow Cake. It comes out great every time I make it, and best of all its all in one bowl!

I make all cakes that call foe marg with oil
unless it's a super pachke kind of dough
but it comes out delish!

That cake is the one I though of when I read the title of this thread. I am a chocolate lover, but this is my favorite cake of all!

Yellow cake from kosher palette:

3 cups flour
2 cups sugar
1 Tablespoon Baking powder (yes not teaspoon)
1/2 tsp salt
1 cup oil
1 cup Orange juice (I use soy milk)
1 tsp vanilla extract
4 large eggs

Mix dry ingredients. Add the rest till well blended. 9x13 pan. bake 325 for 50 minutes or till done.

White Cake (not sure where I got this recipe from)

1 egg
1 cup water/juice
1 tsp vanilla
1 1/4 cup sugar
1/2 cup oil
1 3/4 cup flour
2 1/2 tsp baking powder
1/2 tsp salt

Mix all the wet ingredients and the sugar together, then add rest of dry ingredients. Bake on 350 in 9x13 pan for 30-40 minutes.

I used water rather than juice and only used 1/4 tsp salt, I think it comes out salty with the full amount. It's really good, the only thing is that it's not such a big recipe, you may want to make a double recipe in one pan.

Also:

Simple Vanilla Cake (Kaboose.com) This is more dense while the first cake is more fluffy.
2 cups sugar
4 eggs
2-1/2 cups all-purpose flour
1 cup milk (coffee whitener)
3/4 cup vegetable oil
2-1/4 teaspoons baking powder
1 teaspoon vanilla

Preheat oven to 350 degrees F (180 degrees C). Grease two 9-inch round cake pans or one 9x13-inch rectangular baking pan.
In a large mixing bowl, with an electric mixer, beat sugar and eggs together until slightly thickened, about 1 minute. Add flour, milk, oil, baking powder, and vanilla and beat for another minute, just until the batter is smooth and creamy. Don't overbeat. Pour batter into the prepared baking pan(s).
Bake in preheated oven for 30 to 40 minutes or until the tops are golden and a toothpick poked into the center of the layer comes out clean. (A single rectangular pan will take longer to bake than two round ones.) Let cool completely before covering with frosting, if desired.

Here is the Egg-free recipe. It is a super-easy one-bowl cake. I've made it lots and never used the parchment like they say to. Notice that you don't put the vinegar in till the very end. It reacts with the other ingredients to make the cake rise without eggs. I have a chocolate recipe like this too if you want.


Vanilla Eggless and Dairy Free Vegan Cake

• Prep Time: 10 mins
• Total Time: 40 mins min
• Serves: 6 -9


Ingredients
o 1 1/2 cups unbleached all-purpose flour
o 1 cup sugar
o 1 teaspoon baking soda
o 1/2 teaspoon salt
o 1/2 cup vegetable oil
o 1 cup soymilk
o 1 tablespoon vanilla extract
o 1 tablespoon vinegar

Directions
1. Heat oven to 350°F
2. Prepare cake pan: Line 8-inch round or square cake pan with parchment paper and grease bottom and sides of the pan. Then flour the pan.
3. Whisk together flour, sugar, baking soda, and salt.
4. Add vegetable oil, soy milk, and vanilla extract; whisk until no lumps appear and batter is smooth.
5. Add vinegar, stir about seven times, and quickly pour into pan.
6. Bake around 30 minutes, until cake begins to pull away from sides and/or toothpick inserted in the center pulls out clean.
7. Let sit for ten to fifteen minutes, invert, and cool on rack.

Just to second the poster who said this. I've switched all my margarine cakes to oil and it works great. It doesn't always work with cookies or bars, but cakes DO NOT need margarine!
