What is the best - easy to roll, non-sticky, can withstand a lot of handling by little kids - recipe to use for Chanukah cookies? I am specifically looking for a recipe that uses (or can be substituted) for oil.

This is the cookie dough that I use whenever I bake with my kids (which is quite often)
Keep in mind this is an Israeli recipe. (Klara Patel)
1/2 kilo flour
1 cup sugar
1 margarine (at room temp.)
2 eggs
1 baking powder
1 vanilla sugar
1 cup cocunut (opt.)
For decoration: confectionary sugar, melted sugar, coloful sugar
using v mixer piece- Beat suar, vanilla sugar, margarine and eggs until creamy
Add coconut, flour & baking powder and keep mixing until you get a soft dough.
Flour working area . Roll out dough & make shapes. Decorate & bake.
Preheat oven to 160, bake for 20 minutes. The cookies stay light.
Sprinkle confec. sugar after baking.

This is our go-to recipe for Chanukah cookies and hamantashen - great because it doesn't need a mixer, uses oil, and doesn't need refrigeration prior to rolling.
4 c. flour
2 tsp. baking powder
1 c. sugar
2 eggs
3/4 c. oil
1/4 c. warm water
1 t. vanilla
1 t. lemon juice
Do not refrigerate dough before rolling.
Bake at 350 for 20-25 minutes.

2 reasons why I like this recipe:
1. oil not margarine
2. no chill time

I just made them for my dd chanulka party tomorrow and they are fantastic. I used almost all whole wheat flour and instead of oj I used grape juice as I did not have any oj.
They shaped very easily with our dreidel cookie cutter and I was so pleased as I was worried it would not work. We all had a fun time making it.

I just made them. Easy, quick and delicious. Very easy to work with. I didn't have any lemon juice in the house and so I added a little apple juice instead and it was perfect.
