OP here. I can B"h afford fruits and vegetables, just no chicken this week. (F&V are b"h not so expensive here). What can I make for a healthy nutritional meal with vegetables etc,?

you can buy lentils, beans etc.
beans make delicious dips - there are lots of recipes on line.
Rice and lentils is good. or you can make a lentil shepherds pie.
do you have any type of meat or fish?

A hearty grain dish - maybe kasha varnishikes. Roast butternut squash - I just cut chunks and sprinkled with a chicken seasoning spice mix and baked until fork soft.

Op here. Thx for the advice ysydmom but first I"m not from NY and second I just realised that the title sounds that I don"t have to eat this shabbes. B"h I have plenty to eat and we are not starving we"ve just fallen a bit short on cash this week so I don"t have money now to eat the chicken and I"m looking for nutritious meals without it. I"ll PM a mod to change the title.

rice and lentils is called majedra. When I made it I googled the recipe.
you can make a white bean dip by pureeing cooked white beans and garlic.

honestly I am just googling these recipes. I really don't have time now to type up long recipes I'm afraid. I'm guessing you know how to google.
devilled eggs - hardboiled eggs cut in half with the insides mashed with mayo.

Here's a great vegetable frittata recipe. After the step in the recipe where you beat the eggs with the sauteed veggies, just pour the mixture into a greased 9" pan and bake at 350 for 30 min.

we're mostly vegetarian, I cook chicken for the kids but otherwise our shabbos meal is vegetarian.
veg. soup with matzo balls is pretty filling, with a salad, I'm done.
or rice with stewed vegetables over it. my current fav. is sauteed onion and garlic with cinnamon and ginger, add golden raisins some chopped tomatoes or tomato sauce. boil a bit, add cubed butternut squash and carrots (in summer I add zucchini but too expensive in the winter), cook until vegs are tender. pretty filling.
or a risotto.
or roasted potatoes with grilled bell peppers. oh, or portabello mushrooms if you like those.
I fill up pretty easily without chicken, especially on shabbos, we always have challah and dips to round it out.

It is a standard recipe. I googled and found this one which is how I make it. http://homecooking.about.com/o.....3.htm You can also just use water instead of stock. Salt to taste.

you can make a variety of kugels like a broc. noodle, potato sweet noodle with fruit canned or fresh
fruit crisp or apple kugel
vegetarian chili or parve chulent
fried rice
