Scrub four big yellow potatoes, cut in wedges (about 8 per potato). Toss with 2.5 tablespoons olive oil, 1 tsp. salt and 1/4 tsp. pepper. Roast at 450° for 20-25 minutes (bottom third of oven). Sprinkle with 2.5 tablespoons balsamic vinegar and toss again to make sure the vinegar is distributed over the potatoes. Continue roasting till vinegar evaporates, about 3-4 minutes. You're supposed to sprinkle about a tsp. more vinegar over the potatoes before serving, but I don't do that because my husband doesn't love a very strong vinegar taste.

this is an easy Thursday night dinner....
bought whole wheat pitas
topping with Don Pepino pizza sauce and shredded orange cheddar cheese
bake or pop in toaster oven for 9 minutes.
serve with salad
If I have time I will sautee some frozen broccoli to put on top of mine and DH's
Kids love it, so fast to make, healthy and pretty cheap... hard to beat that combination!

Fry an onion, add a couple T. flour (w.w. is fine), 1 can tomato juice, 2 t. lemon juice, 1 t. salt, 1/2 c. sugar or splenda. Bring to a boil and cook on high for 5 minutes.
Fastest soup I make!

I made orange flavored beef with some leftover steak hubby found in the freezer, stir fry veges with hoisen sauce, brown rice and eggrolls. My son also made a nice salad but we never actually ate that so I guess I'm having salad for lunch tomorrow.

salad
I'm cutting up different vegetables and putting it in separate bowls and I made garlic croutons and hard boiled eggs and I'm going to cut up cheese and everyone can make their own salad. I also bought pita bread, just in case they want a little more substance.
