Need Help with cheese Blintz filling!

This is the recipe I used for the filling:

1 lb cottage cheese
8 oz sour cream
1/2 c sugar
vanilla

please tell me where I went wrong. The filling is liquidy, and runs all over when you try to roll the blintz, or bite into one.

I even added 1/2 cup flour, and it is still liquidy.

do you have another better recipe that I should use for the rest?

I think that is because you used cottage cheese, which is more watery. I have a great farmer cheese filling if you are interested.

Maybe try blending the mixture with an immersion blender. It might make it thicker.

Heres the recipe:

1 lb. farmer cheese
1/2 cup sugar
2 vanilla sugar
1/4 cup sour cream
Mix, adding in small drops of milk until you get the creamy texture you want.

Just made my blintzes tonight, they are yummy!

Thank you! I will try the farmer cheese recipe, though I cant imagine adding milk, it would make it too wet, I think. we'll see how it goes.
is farmers cheese just strained cottage cheese, so its more dry? could I theoretically strain my cottage cheese, I already bought so much,Shaking instead of buying famers cheese?

1.5 lbs cottage cheese
1T melted butter
2 egg yolks
1T sugar

Freeze and thaw the filling before you make the blintzes, this will break the cottage cheese curds into smaller pieces that mix with the whey and egg and will minimize the liquid whey runoff. Full fat cottage cheese (4%) seems to work better/ be less runny in my experience. Alternatively, you can rinse the cottage cheese in a strainer before use and use it as dry curd, but I don't think that tastes as good. Refry them seam side down (you can fold all sides in if you want to minimize leakage). Don't overfill.

2 parts farmer's cheese
1 part whipped cream cheese
sugar and vanilla to taste
