I want to make healthy but tasty cookies to send with my DH in the morning, instead of him sitting down to breakfast. I have tried many muffins, but he requested cookies instead.
I found a few recipes online, but I am looking for one using some flax seed or chia seeds, very little or no oil, and also not much dried fruit. Something like oats applesauce.... any ideas?

How about oatmeal cookies? When I make them I cut the sugar by 3/4 because I add chocolate chips and walnuts. I dont like super sweet, I also use whole wheat flour. They are yummy warm and fresh out of the oven. They also freeze well.

You might look on the website for the oatmeal product for their recipes, and adjust your way. You can probably make a big batch of dough and keep it in the fridge and just use a little bit when you need it. The oil will keep it fresh and moist.

But it is so romantic and healthy for him to sit down to breakfast.

You may be talking about scones. There are scone pans.

Here are some scone recipes. If you want to substitute water for the milk in them it is probably fine.

You can make oatmeal cookies using whole wheat flour, applesauce instead of oil, throw in germ wheat....

I have a breakfast cookie recipe here. BTW you shouldn't heat chia seeds, it destroys their nutritive powers

Elana Mizrahi posted a couple of great healthy recipes here http://www.chabad.org/library/.....t.htm - I usually make monster carrot cookies- they are delicious and no-one believes they don't have sugar in- the poppy-seed ones are also fantastic...

Try granola bar recipes. I love the Playgroup Granola Bars from Allrecipes.com, I use ww flour and agave syrup and throw in nuts and dried fruit for flavor.

Whole Grain Breakfast Cookies

Ingredients (Original recipe makes 18 cookies)

1 cup walnuts
1 1/2 cups old-fashioned rolled oats (not instant)
1/3 cup whole wheat flour
1/2 cup ground flax meal
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 cup almond butter
1/4 cup canola oil
1/4 cup blue agave nectar
1/3 cup brown sugar
1 egg
1 teaspoon vanilla extract
1/2 cup dried cherries
1 cup semi-sweet chocolate chips


Directions

Preheat oven to 375 degrees F (190 degrees C). Line baking sheets with parchment paper.

Pulse the walnuts in a food processor several times to chop; continue processing until the walnuts are ground into flour; transfer to a bowl. Mix in the rolled oats, whole wheat flour, flax meal, baking soda, salt, and cinnamon until thoroughly combined.

Combine the almond butter, canola oil, agave nectar, brown sugar, egg, and vanilla extract in the food processor and process a few seconds to blend the ingredients well; transfer the almond butter mixture to a large bowl and fold in the dried cherries and chocolate chips. Mix the walnut-oatmeal mixture into the almond butter mixture (dough will be very thick).

Scoop up heaping teaspoons of dough, and form into balls; lay the dough balls onto the prepared baking sheets, about 2 inches apart.

Bake in the preheated oven until lightly browned, 8 to 10 minutes. Remove from oven and flatten the cookies with a spatula. Allow to cool for about 5 minutes on the baking sheets before removing to finish cooling on wire racks.

I Never made them, I just posted the link because people seem to love them. I originally assumed it was u sweetened condensed milk, aka evaporated milk. After googling around a bit, it seems I was wrong. People have been using sweetened condensed milk. Oh well. That still leaves the option of using a can of evaporated milk or making your own evaporated milk and adding a bit of sweetener. (which is a still a lot less sugar than a can of sweetened condensed milk.)

I make these and they are soo good and healthy!

I make them without the yogurt. When I first made them with the yogurt the batter was very thin, but without the yogurt its perfect and if at first it is a bit thin I let it sit and it thickens. I also use an ice cream scoop to measure and make nice size cookies. My batches make 14 big cookies.

Oh and I use chocolate chips, not raisins.

These are delicious, easy and healthy:

Sesame Crisps

1 1/2 cups sunflower seeds
1 cup sesame seeds
3/4 cup chocolate chips
1/2 cup brown sugar
1/2 cup craisins
1 egg

Combine all ingredients in bowl and mix well. Spoon into small cupcake papers and bake 12-15 minutes @ 180c.

One is better off eating oil than any kind of sugar. Don't stint the oil, and cut way back on the sugar. Any bland oil is fine.

There is a recipe with dates and a ripe banana, a "no sugar cookie".

The carrot cookies look good. Do you think I can use sugar free maple syrup? I know it's not totally healthy and pure, but it's less calories.

I'm going to buy wheat germ today! I've been looking for something like this. Thanks. Going to try it with sugar free maple syrup instead of honey.
