Is it better to make the dough, freeze it and then fill and bake fresh or to make the completed hamentashen and then freeze? Does it make a difference?

If you have the time & energy to make them now I say go for it & freeze them ready to eat! You'll always have other things to do later....

they freeze fine baked. I think they taste better actually

Definitely bake and freeze.
(when I do this I need to hide the baked goodies in an opaque container at the back of the freezer, under the chicken and behind the frozen veg. Still most of them manage to disappear )
