O.k Ladies need ideas. In case no one has noticed its HOT!! ( and not because I am wearing stockings) ................so I need some ideas to replace the soup and please don't say fruit soup because I serve fruit for dessert and its a little redundant. Thanks

Salads: tehina, chummus, eggplant, egg and so on with challa. Antipasti = roasted veggie platter. Pasta salad with salami in it.
My mother always served grapefruit on weekdays and melon on Shabbat as a first course. We never had soup. Too hot in Israel (though people do it) without a/c.

Cold almond and cucumber soup, salmon, chicken, corn on the cob, green beans, salads, grapefruit, and cold cuts. Ices for dessert.

I am serving cold salads instead of warm kugels in addition to several regular items:
Potato Salad
Macaroni Salad
Waldorf Salad (always my favorite snack)
Taboulli Salad
Corn Salad.
I can then serve most leftovers for Seudat Shlishit along with eggs and tuna.

mha3484, can I just serve my regular zuchinni soup cold?
everyone in my family wants hot soup no matter how hot it is.
I am going to try it cold.

I make my normal recipe and serve cold. It's a good way to get veggies at lunch too.

You can do cold fish course: fried fish (at room temp), smoked salmon, poached salmon, escaveche
Cold non-fruit soup: gazpacho, vichycoise
For main, I like serving cold poached chicken, variation being chicken salad, coronation chicken, with peso mayo etc.

Sorry, I just saw this!
1 C ground almonds
4 cloves garlic
4 C vegetable or pareve chicken stock
1/4 C white vinegar
1 medium cucumber, peeled, seeded, and chopped
Blend in blender, food processer, or immersion blender until milky. Salt to taste. Refrigerate.
Serve garnished with cucumber slices or halved red grapes.

I stick with salads and dips, or you can do things like mini knishes and borekas and kibbeh and hotdogs in blankets (with dips...). Still warm, but not as warming as hot soup.

Cook a steak rare (I like skirt steak or london broil). Slice it very thin and refrigerate.
Toss with lightly steamed broccoli florets or fresh spinach leaves, some mandarin orange sections, and your favorite Asian sesame salad dressing. Garnish with slivered almonds and minced green onion tops. Light, yet full of protein and vitamins.
