I'm not super creative when it comes to lunch protein but I rotate between packing hard boiled eggs, egg salad, tuna salad, and salmon salad (canned salmon-mashed with mayo and apples) for my family. I pack my husband this with a salad, fruit and rice cakes; for my son I pack one of the above with a rice cake, fruit, cucumbers, tomatoes and sometimes a home made cookie or a fruit strip. My son doesnt do well with white flour and so I do spelt baked goods (thanks Hashem Yaazor for the new recipe!)- here and there.
