Preheat oven to 365
In 9x13, in the following order:
mixed brown/black/red rice
sundried tomatoes
fresh ginger
fresh garlic
scallions
fresh herbs ( rosemary, parsley, basil)
fresh spinach
spices
mix together
add EVOO and water*
place chicken on top of rice mixture
1 can tomato sauce/ paste optional
Cover tightly with foil
Bake 3+ hours or so.
*less than 2 tablespoons of EVOO, water to cover rice.
Sometimes I add Israeli rice mixture for more flavor and texture.
