If you're asking about sushi salad, this is what I put in mine:
1. Sushi rice: (make sure its room temperature) my recipe-->

2. Carrots and onions fried with ginger
3. Scallions chopped up
4. Sushi nori- what they use to wrap the sushi- all cup up into thin thin slices
5. Cucumbers diced really small
6. Fake crab meat cut up into really tiny peices
7. Oil- little bit
8. Little bit of soy sauce (you don't want the whole salad brown)
9. Maybe a little wasabi
Mix it all together. Enjoy!! Send me some!

You don't actually need fake crabmeat for it- you can do it vegetarian. I just like the fishy taste.

Honestly, I'm telling ya it doesn't matter...
Some people prefer the veggies, some people prefer the rice. I do it with however much rice I have, then eat some, and then stretch it by adding more veggies...
But if you want an approximate amount- For 3 cups of rice, probably put in half an onion, 2 carrots, 1 standard american size cucumber (peeled) or two small israeli style cucumbers... uhh... Can you tell I don't use exact amounts?
As for oil- tablespoon maybe. Soy sauce add some (1 tbs) and then decide if you want it stronger or not. I don't like my sushi so soy saucy, so I don't put so much soy sauce into my salad...
Btw, you don't need every single ingredient in here- as long as you have the rice and at least two other ingredients (and oil and soy sauce) you should be fine...
I invented this recipe when my mother tried to make sushi with regular rice and wanted me to roll it, but it wouldnt stick and she didnt chap that... So I made it into salad... And everyone liked it just as much.
And thanks to you guys, I just decided to make this for shabbos- don't have any scallions (maybe I'll buy) and don't have any fishy stuff (lox or fake crab) but it'll still be great for shabbos lunch. (I don't heat up food on the blech, and don't feel like making cholent this week...)

Hey I didn't know ppl had other recipes or thst ppl used that name "sushi salad" I thought I was the only one
My came to be with left over sushi rice.
This is it:
Sushi rice prepared as if it is for sushi(sugar, salt and vinegar of your choice)
Nori cut up in thin slices
Veggies any that you may find in sushi rolls, avocados, thin strpis of carrots, cucumbers, scallions, thin strips of peppers.
Sometimes fake crab
I didn't like it w/pickled ginger
Dressing: olive oil, soy sauce, plum vinegar or apple cider and/or brown rice vinegar, wasabi powder
Room temperature is best.
Umm delicious.
