I have roasted but savory, not sweet. Although carrots are naturally somewhat sweet of course and the roasting carmelizes their natural sugars.

I just remembered that the first KBD has a recipe for roasted carmelized carrots:
3 pounds carrots, peeled and sliced into 1/4 inch disks
1/2 c. sugar
3-4 Tblsp vegetable oil.
Preheat oven to 400. COmbine carrots, oil and sugar in large bowl and toss. Spread into disposable tins in single layer.
Roast about 45 min - 1 hr on middle and top oven racks until carrots are carmelized and begin to shrivel. Shake occasionally to prevent burning.
Never tried it but it sounds good and easy.

OK - here goes:
Spicy Carrot Sticks - (sorry, don't remember where the recipe is from )
6 large carrots, peeled and ends trimmed
1 egg white from a large egg
3 Tblsp olive oil
1 Tblsp water
1.5 tsp. garlic powder
1.5 tsp cumin
1.5 tsp sugar
1/2 tsp paprika
1/4 tsp ground white pepper
1 tsp coarse sea salt or kosher salt
1. Preheat oven to 450. Cover a jelly roll pan with parchment paper. Set aside.
2. Cut each carrot in half to make 2 pieces and then lay flat on cutting board and slice each half into 3 equal strips to make thin carrot sticks. (If carrots are long you can then cut them in half horizontally to make shorter sticks).
3. Place egg white in bowl, and whip until foamy.
4. In a separate bowl combine spices, oil and water (but not salt).
5. Coat carrot sticks first with egg by tossing in the bowl with the egg white.
6. Then stir the carrots into the spice mixture. Arrange in single layer on pan and sprinke with salt.
7. Roast for 20 min, uncovered.

Just adding - the recipe calls for parchment paper. Better watch it carefully so that it doesn't burn at the high temp that the recipe calls for. IIRC I used a disposable foil pan and didn't bother with the paper at all.

I would still slice them a bit. You want thinnish sticks so that there's more surface area that the spices get to.
