I love my recipe and it's pretty simple.
Boil potatoes in their skin.
When soft, cool under water and peel off skin.
Cut into cubes.
Mix with chopped onion, green (or any) pepper.
Add mayonnaise, salt, pepper, vinegar.
(I like lots of onions.)

Potatoes and pickles (we like garlic dill)
Dressing- mayo, white vinegar, salt, pepper, mustard, garlic in whatever form you have, fresh crushed or powder
For when you want to go fancy however, I highly recommend the warm mushroom potato salad from kosher by design short on time.

Boil potatoes (in skins), carrots and eggs. Peel and dice cooked potatoes, slice carrots, and dice small (or smash) boiled eggs. Add mayo, sliced pickles and some pickle juice. Salt and sugar to taste. Enjoy!
