I had something like this before and really liked it but can't manage to replicate it by estimating. It was a kugel where the only ingredients were grated zucchini, eggs, and spices. The person who made it said she just throws it together without measurements, but when I tried that, the results were not yummy.
Anyone have a specific recipe for something like this? I wouldn't mind including mayo (I make my own with olive oil) but I don't want any breadcrumbs/gluteny stuff. I would also like to be able to make the same type of thing with pureed broccoli if anyone has a recipe for that either.

Assuming you mean a parve recipe? I love this one and it's probably good with any veggies (I've tried spinach and chopped broccoli). I substitute soy milk for nondairy creamer to be slightly healthier.

Mrs Bissli has a nice zucchini frittata / quiche recipe.

Season to taste.
Steam and puree 24 ounces of frozen broccoli, mix with 6-8 egg whites and season to taste. Spread into a 9x13 pan and bake at 400 for 1 hour.

Thanks, the zucchini recipe is exactly what I was looking for. Will try it!
For the broccoli, does it have to be egg whites or could I use 3-4 whole eggs instead? I hate throwing out yolks...

Nope, doesn't have to be whites. This is just how I make my fat free kugel
If you'd like, you can sauté onion and garlic in oil and puree that with thawed frozen broccoli, add eggs, season and bake.

Zuchini Quiche
Cook 2 peeled med- samll squash (I boil in water) and then mash [if large only use 1]
Mix in bowl:
1 onion diced (sauteed - I sometimes put in without sauteing or skip)
2 eggs
1 tbsp sugar
3/4 cup breadcrumbs
1/2 can mushrooms (saute with the onions if sauteing)
garlic, pepper, and salt to taste
Add mashed zucchini
Pour into frozen pie crust (deep dish pie crust is a good size, otherwise it will be too much filling)
Bake 1 hour at 350

Not really. These recipes weep water when frozen and defrosted and get soggy.
