For a simple recipe, spice and spirit has a vegetable meatloaf
Vegetable Meatloaf
2 pounds ground beef
1 zucchini
4 carrots
1 potato
1 large onion
4 celery stalks (optional)
3 garlic cloves (optional)
1 teaspoon salt
pepper
4 eggs, beaten
oil
Peel and cube vegetables. Process in blender or food processor along with eggs and spices. Transfer to a bowl. Add meat. Mix until meat does not feel loose.
Pour into a greased 9" square pan. Bake uncovered at 350 for 1 hour. Allow to rest a few minutes before cutting into squares.
You can mix ground beef with mashed potatoes and season then glaze with homemade duck sauce or sweet and sour sauce (all made with limited ingredients).
Or you can do a barbecue meatloaf and use mashed potatoes instead of crumbs.
